T’is this season for Pumpkin & cinnamon, and nutmeg and every other freaking fall flavor there is! I wanted to put together a yummy breakfast for you using pumpkin and I made a couple of them. But you’ll have to wait later in the week to see all of them!
Today I’m sharing the Pumpkin Spice & Vanilla Yogurt Crunch Parfait recipe, which turned out awesome! I totally intended to have it for breakfast tomorrow and then my daughter came home and had it as an after school snack!
I decided to add a few chia seeds in there for a little extra super-foodiness!
- ½ Vanilla Yogurt
- 1 TBSP Pumpkin Pie Filling
- Shake or two of Cinnamon, Ginger & Nutmeg (Pumpkin Pie Spice)
- Mix Pumpkin, Yogurt and spice in bowl
- Layer granola & yogurt mixture in mason jar
