Creamy Pumpkin Spice Overnight Oatmeal

As I mentioned yesterday, I am in full swing Pumpkin mode! Last night I whipped together a little Creamy Pumpkin Spice Overnight Oatmeal using a little pumpkin pie filling and am just finishing it up right now. I love it! My secret ingredient is to use steel cut oats because it makes it a little chewier…and I like..you may not, in which case you can use just regular oats!

Creamy Pumpkin Spice Overnight Oatmeal
 
Ingredients
  • ¼ Steel Cut Oats
  • ¼ Pumpkin Puree
  • ½ Almond Milk
  • Dash of Pumpkin Spice (Cinnamon, Ginger & Nutmeg)
Instructions
  1. Mix the ingredients in a bowl and then pour into a mason jar.
  2. Cover with lid.
  3. Let sit overnight
  4. Microwave for 1 minute to eat or eat cold!

    Do you put the mason jar in the fridge or does it matter if it sits out on counter over night. You dont say but i am assuming in the fridge?

      Yes, place in refrigerator. Usually good for about 3 days.

    The steel cut oats….are they raw or cooked when you place them in the jar?
