Full disclosure, I’m on a diet..not a diet to lose weight per se, but just a diet to get my insides clean and healthy..so I’ve been avoiding gluten. Today makes 2 weeks that I’ve been on this diet, and I’m not gonna lie, I miss it! But, I’m committed to getting healthy so I did a quick search for gluten free banana breads, and found this one on Running with Spoons. I adapted it a little to include Coconut Milk, Coconut shreds and pecans! The best part about this recipe is that it literally takes 5 minute to make and bake!

Ingredients:

  • 1/4 c. Coconut Milk (Unsweetened)
  • 1/4 c. Almond butter (You can use cashew butter as well)
  • 1/4 tsp. Baking powder
  • 2 tbsp Nutiva Coconut Flour
  • 2 tbsp Brown Sugar
  • 1/2 Ripe Banana (Mashed)
  • 1/5 c. Dark Chocolate Chips
  • Sprinkle of shredded pecans
  • Pinch of shredded coconut

I preferred to mix all of the ingredients in a separate bowl, rather than dump them all in the jar…makes it easier for mixing. The first thing I did was combine the dry ingredients: Coconut flour, Brown Sugar & Baking soda in a small bowl and mixed until they were combined.

I then added the mashed banana, almond butter & milk into the same bowl. Combine both of the dry and wet ingredients together and once the mixture is free of lumps, you can add the toppings: chocolate chips, pecans and shredded coconut.

Once everything was mixed together, I put into a half pint mason jar and put it in the microwave for 2 1/2 minutes. That’s it!

Serve warm and don’t share this dessert with anybody. The warmth of the dessert and the melty chocolate makes this seem like an indulgent dessert, but it’s actually healthy for you!

    you listed baking powder in list of ingred. but later said baking soda. which did you use for this recipe?

    Would I be able to substitute almond butter for regular? If so, how much regular butter would be needed for one serving?

    this looks delicious and so easy!! looking for quick, healthy breakfasts for the kiddos at back to school time!
    do you think it would work substituting almond flour and almond milk for the coconut products? mostly, because that is what i have in the house.

    MichelleChef, thanks for the breakdown! I’m always amazed at what bloggers consider “healthy” when I go in and check the nutrition facts for some of these recipes! You can cut out gluten, but if you replace it all with sugar and chocolate chips, you’re not doing yourself any favors!
