Coffee cherries are chosen in numerous areas by expert workers who can choose the ripest cherries only, therefore guaranteeing the quality of the fruit. Processing: Preparing the Beans

There are two fundamental processing approaches: wet and dry. During the dry process, the cherries are exposed to the sun for many weeks, causing the fruit’s outer layers to shrink and simplify bean removal. In contrast, the wet technique uses a machine to remove the outer fruit layers before fermenting the beans in water to eliminate any remaining pulp. Both procedures influence the final taste of the coffee; whereas dry processing can provide a more complex, deeper flavor profile, wet processing typically produces a cleaner, brighter taste.

Milling: Refining the Beans

The beans remain encased in a layer of parchment or husk that must be removed before they can be roasted after processing. Milling is used in this application. Milling is the process of polishing beans and preparing them for roasting. The first stage of milling is hulling, which involves removing the beans’ leftover outer coats. Next, the beans are polished to remove any remnants of husk or paper. Following hulling and polishing, the beans are sorted and appraised according to their size, weight, and quality. This ensures that the roasting process only uses the greatest-grade beans. The beans, commonly referred to as “green coffee,” are stored in large bags and ready for export to roasters worldwide.
